Crunch, clustery granola recipe: - 2 cups of old-fashioned plain ol' rolled oats - 1-1/2 cups of nuts or seeds, untoasted - 1/2 cup ground flaxseed - 1 cup shredded, unsweetened coconut - 1 tsp each cinnamon, nutmeg - 3 tbsp maple, honey or other sweetener - 1 tsp salt - 1 egg white or flax egg - 1/4 cup oil, butter or other fat - 1 tsp vanilla - Dried fruit or chocolate chunks
Mix the liquidy ingredients together, then combine with the dry ingredients. Adjust sweetness / saltiness to your preference! Bake at 300F for 25 min on a non-stick or lined tray, flip with a spatula in an attempt to retain clusters, then bake for another 20-min or so or until golden. Cool, consume. Consider adding dried fruit and/or chocolate chunks after it's all cooled if you're after a delightful on-bike snack!
